Sodium Alginate
Sodium alginate is the sodium salt of alginic acid with a yellowish physical appearance. While alginic acid is an edible polysaccharide, sodium alginate also is edible and more soluble in water; hence, well-known used in the food industry as a food additive. Other uses of sodium alginate in the food industry are paper coating in the pulp and paper industry and dyes thickener in the paint industry. Manufacturing Process
Sodium alginate is manufactured through the treatment of alginic acid. Alginic acid extracted from harvested brown seaweeds is mixed with sodium carbonate solution and further processed with two options: processed with calcium alginate method or alginic acid method. The major distinction is from the addition of calcium chloride to the calcium alginate method, while the alginic acid method did not use calcium chloride.
Brown seaweeds are harvested and extracted, further processed with dilute formalin to preserve the chopped seaweed.
After brown seaweeds extraction and preservation processes, soda ash is introduced to the seaweed to obtain alkaline extract and the seaweed residue is separated.
The alginate solution is treated with hydrochloric acid to induce gelation, thus alginic acid gel is obtained.
There is still water content existed in the alginic acid gel, therefore, dehydration is conducted to remove the impurities caused by water.
At the final process, the alginic acid is heated and soda ash is introduced once again to remove the excess acid and to form sodium alginate.
Applications
Food and Beverage
Sodium alginate may provide elasticity, adhesion, and enhance the freshness of finished products; hence, used in food and beverage as a food additive, particularly as a stabilizer, thickener, and edible coating.
Pulp and Paper
Sodium alginate has a role as a paper coating that provides surface sizing; hence, improving the smoothness of a sized sheet.
Paint, Ink and Coating
As in food and beverage applications, sodium alginate can also be used as a thickener of dyes in the paint, ink, and coating.
